By precisely adjusting the roasting temperature, time, and number of cycles, we enhance not just the bitterness but the authentic umami and fragrance unique to the tea leaves. Kosyuen’s unique “deep-steaming” method involves steaming the tea leaves longer than ordinary sencha, followed by a careful roasting process to bring out a richer flavor.

Boil and cool hot water

Boil and cool hot water

Pour boiling water into tea cup and allow to cool. The ideal temperature is 70–80°C (158–176°F). Higher-quality teas are brewed at lower temperatures.

Place the tea leaves into the teapot.

Place the tea leaves in the warmed teapot. Use 3/4 of a teaspoon (approx. 3g) per person.

Pour the cooled water into the teapot and steep. For high quality sencha, steep for 2 minutes; for deep-steamed tea, steep for 60 to 90 seconds.

Pour the tea evenly  for consistent taste.

Pour the tea gradually and evenly into the warmed teacups so that taste and color of the tea is evenly distributed, making sure you pour every last drop.

For the second brew, use hotter water (80–90°C / 176–194°F) and shorten the steeping time to approx. 10 seconds.

Place the tea bag into the cup.

Place one tea bag into a cup or teapot (about 140–180 ml).

Pour boiling water.

Pour boiling water.

Hook the tea bag tag onto the rim of the cup to secure it before pouring hot water.
*Please use water that has been brought to a full boil.

Enjoy your tea.

After about 1 minute, remove the tea bag and enjoy your tea.
*Adjust the water amount and steeping time according to your preference.
